Introduction

The previous unit described food tourism from the demand perspective and provided a definition on food tourism and food tourists. This chapter offers an overview on the supply side of food tourism, presenting the general characteristics of the attractions and then outlining a new typology of them, where each type is thoroughly described and illustrated by best practices. After that, the role of international restaurant guides will be highlighted, and then the last section of this chapter will deal with sustainable questions of service providers’ operation.

Cultural tourism and creative tourism are the most dynamically expanding areas of the tourism sector. In the theoretical chapter we review the definition of the two trends, the characteristics of the demand and supply side and clarify the concept of a cultural tourism product.
