Types of food tourists

Acknowledging that food tourists’ motivations are shaped by push and pull factors, here the focus in on the different types of food tourist. We generally assume that visiting local food markets and savouring local food are significant pull factors in food tourism. Although it is clear that not all tourists are gourmand [a French noun in use since the 15th century indicates a ‘person who loves eating good food’] or gourmet [a French noun and adjective indicates a ‘connoisseur of food and drink’]. While most tourist are more or less attracted by food we must consider also those consumers who are intolerant or repelled by some food. Restrictive or avoidant eating patterns are widespread in general population. In fact, local food may be ambivalent attraction: being not only fascinating, but also strangely unfamiliar or even anxiety-triggering.

Cultural tourism and creative tourism are the most dynamically expanding areas of the tourism sector. In the theoretical chapter we review the definition of the two trends, the characteristics of the demand and supply side and clarify the concept of a cultural tourism product. We overview the development strategies that have defined the global museum market in recent decades and discuss the role of museums in the revitalization efforts of cities. You can also get a deeper insight in the operation of colourful science and transport museums. Afterwards, culinary tourism chapters examine consumer behaviour in food tourism and its link to social media which is followed by an overview on the supply side, a new typology of attractions in culinary tourism.
