Summary

This chapter focussed on food tourists’ motivation and on the push and pull factors influencing their motivation to travel to a destination or to attend a culinary festival. Consumers’ trust in food has become a key issue for food choice. For example, the production process of food is not always transparent for consumers. In offering food tourism activities and services, it is key to be transparent to enhance consumers’ trust. Food tourists do not trust or mistrust a piece of food itself, they trust or mistrust the actors who are responsible for the production, processing, marketing and control of the food. Accreditations and certificates have the potential to build consumers’ trusts in food tourism offerings. The studied concepts have significant practical implications as demand for food tourism is becoming more diversified, a new competitive momentum can be gained through exploiting more contemporary and connotations of local dishes and regional food. These aspects were analysed considering the latest trends and changes in food tourism offerings and demand.

Cultural tourism and creative tourism are the most dynamically expanding areas of the tourism sector. In the theoretical chapter we review the definition of the two trends, the characteristics of the demand and supply side and clarify the concept of a cultural tourism product. We overview the development strategies that have defined the global museum market in recent decades and discuss the role of museums in the revitalization efforts of cities. You can also get a deeper insight in the operation of colourful science and transport museums. Afterwards, culinary tourism chapters examine consumer behaviour in food tourism and its link to social media which is followed by an overview on the supply side, a new typology of attractions in culinary tourism.
