Restaurants and other catering establishments

As shown in the previous chapters on the demand side of food tourism, an important segment of food tourists like to try out new culinary experiences or food-related activities. Local food can be experienced through different ways; however, catering establishments have a key role in it. The role of restaurants in tourism is twofold: on the one hand, they can be interpreted as independent tourist attractions, the supply elements which can even trigger a travel decision (e.g., Michelin-starred restaurants). On the other hand, the quality of the gastronomic offer of a given destination is also part of its suprastructure (Michalkó 2012), as all tourists eat during their travels. However, based on the tourism strategy of Hungary, the latter, i.e., the average general level of the offer of restaurants operating in a given area, may be more decisive for the success of the destination than the presence of one single haute cuisine restaurant (Hungarian Tourism Agency 2021).

Cultural tourism and creative tourism are the most dynamically expanding areas of the tourism sector. In the theoretical chapter we review the definition of the two trends, the characteristics of the demand and supply side and clarify the concept of a cultural tourism product. We overview the development strategies that have defined the global museum market in recent decades and discuss the role of museums in the revitalization efforts of cities. You can also get a deeper insight in the operation of colourful science and transport museums. Afterwards, culinary tourism chapters examine consumer behaviour in food tourism and its link to social media which is followed by an overview on the supply side, a new typology of attractions in culinary tourism.
